Notch8 Executive Chef

Kay Noh, the new Executive Restaurant Chef at Notch8 in Fairmont Hotel Vancouver, brings a rich blend of international flavours and innovative culinary techniques to the hotel’s dining experience. 

Born in South Korea and raised in Canada, Kay's culinary journey is rooted in his early experiences in Winnipeg, where his family opened a restaurant. Kay's professional path began as a server in a Japanese restaurant, quickly transitioning to the kitchen to assist with sushi preparation. His passion for cooking led him to the Vancouver Community College (VCC) Culinary Arts Program, where he was recognized as Student of the Year. His extensive training includes completing his apprenticeship at Provence Marinaside Restaurant and obtaining his Red Seal certification at Executive Hotel Richmond, before advancing through progressive culinary positions and achieving his first Executive Chef position in 2018. 

Kay's culinary style is characterized by a commitment to sustainability, local sourcing, and high quality food. His proudest moments include receiving five-star reviews from guests and winning competitions like the BC Chef Association Black Box Competition. Outside of work, Kay enjoys snowboarding, biking, and reading cooking books. He draws inspiration from renowned chefs such as Thomas Keller and Grant Achatz, and his goal is to create memorable dining experiences that bring joy to every guest.
