Enjoy an intimate, 3-course Thanksgiving dinner in the glamour and warmth of Notch8. From the first bite to the last, it will be a deliciously memorable meal.

When: October 11-13, 2025 from 5:00 p.m.– 10:00 p.m.
Where: Notch8 Restaurant at Fairmont Hotel Vancouver

Price: $79 per adult, $40 per child
(not inclusive of tax & gratuities)
Optional wine pairings are available for $55 per person.

STARTER

Choice of:

Spiced Butternut Squash Bisque
coconut, maple-glazed parsnip, apple, pumpkin seed oil, amaretti crumble

Duck Croquette
honey ginger poached pear, radicchio, gorgonzola dolce, hazelnut, cider vinaigrette

Zucchini Salad
whipped ricotta, almond, mint, basil, honey lemon vinaigrette, brioche crumb

Fraser Valley Turkey
smoked breast & ballotine of leg, potato puree, roasted carrots, brussels sprouts,
turkey gravy, sage brioche stuffing, orange cranberry compote

mussels barigoule, roasted fennel, artichoke, zucchini, wild rice, buttermilk sauce

Mushroom Pithivier
leek, carrot & mushroom stuffed puff pastry, kale, chantrelle,

Cranberry Crème Brûlée

*Seatings at 5:00 pm and 7:15 pm, and a 2-hour seating limit will apply. Please note, children's pricing is for ages 6-12 years, and ages 5 years and below are complimentary from the children's menu. For cancellation and reservation changes, please email the Notch8 Reservations Team at HVC.Notch@fairmont.com a minimum of 72 hours prior to the reservation to avoid a cancellation fee of $25 per person.
